Wine and juice clarification enzyme Sunson® WEM-007

PRODUCT INTRODUCTION

The product is a mixture of different activities targeting at turbidity forming substances in grape juice, wine and other juice, and the individual component of Sunson® WEM-007 is produced from finely select microbial strains in accordance with the standards of FDA, WHO and UECFA. followed by separation, purification and formulation.

 SPECIFICATIONS

 Main Components: Pectinase, Cellulase, Hemi-cellulase, β- Glucanase, Amylase and Protease.

Activity of pectinase : 5,000,000 u/ml Product : liquid enzyme in 25 kg drums (food grade)

BENEFITS:
1. Complete degradation of pectin and various sediments in grape juice, wine and other juice.
2. Reduces the viscosity of grape juice and other juice to ease concentration to high brix.
3. Help with ultra-filtration, and insolubles in recycle tank.
4. Prevention of haze during shelf life storage.
5. Extraction of more color and aroma from fruits.

APPLICATION RECOMMENDATION

Dosage: 0.01~0.06L. The enzyme can be added into clarification tank, while the dosage has to be optimized based on fruit variety, maturity and processing parameters

Remarks: Active temperature range: 20~60℃, ultimately at 40~50℃. Activate pH 3.0~5.5.
Storage and shelf life: This product should be transported and stored in a cool and dry place. At 1~10℃, with no sunlight. Under the storage condition, its shelf life is 18 months.
