Lignocellulosic food softening Cellulase SF-G
Product Description
This product is produced by submerged fermentation of excellent strains (Trichoderma reesei), refined through ultrafiltration process.
It contains a rich array of enzymes, including cellulase and hemi-cellulase, which effectively works on both crystalline and non-crystalline regions of cellulose by proper hydrolysis. Consequently, it makes areca nuts softer.
Advantages and Benefits
l Fluff areca nuts fiber tissue and enhance the flavor uptake
l Make areca nuts have good balance between softness and chewiness
l Improve production efficiency with shorter marinating time
l Soften inner coarse fiber and protect oral cavity from hurt

Quality Standard
This product complies with GB1886.174 (National Food Safety Standard for Food Additives Enzyme Preparations for Food Industry)
Product Performance
Untreated areca nut tissue is tight and hard to tear (Fig a), while enzyme treated one (soaked for 12h) has fluffy tissue that can be easily torn (Fig c). Meanwhile, the inner fibers of areca nut with enzyme treatment (Fig d) are intact, more slender and much softer than the one untreated (Fig b).
1. Recommended dosage: 0.1% ~ 0.5% (dry weight). The final dosage must be optimized as per the actual process parameters and conditions.
2. Dose enzyme at nut soaking (rehydration) process or together with flavors and fragrances during marination.
