The product is extracted from juice of young papaya fruit and then purified and freeze-dried. It’s a high-performing natural plant protease.
MECHANISM
papain is a thiol endopeptidase, i.e., it contains in the active centre a highly reactive cysteine group that is essential for its function. This enzyme hydrolyzes big molecular proteins into easily absorbable small peptides and amino acids.
APPLICATIONS

APPLICATION RECOMMENDATION
The recommended dosage is 0.01-0.5kg/tDS. The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.

WARNINGS
