Food additive enzyme neutral protease for protein hydrolysis

 PRODUCT DESCRIPTION

Neutral protease is produced by submerged fermentation of Bacillus subtilis followed by purification and formulation. It can catalyze the hydrolysis of protein to produce free amino acids and peptides at around neutral pH. Because of its fast hydrolysis under mild conditions and easy control, the product has been widely used in alcohol fermentation, leather softening and depilation, silk degumming, vegetable and animal protein hydrolysis, brewing, juice clarification, baking and feed, etc.

MECHANISM

Protease catalyzes the cleavage of peptide bonds in a polypeptide (protein) chain, producing smaller molecular peptides and amino acid. The endo- type of protease can only liberate peptides, while exo- type can removal amino acid at the one of the terminals of a peptide chain to produce amino acid.

APPLICATIONS

Ø  Food industry

l  The successful applications include: Vegetable and animal protein hydrolysis for health food or other purposes, meat tenderization, wine clarification, soy sauce fermentation, and so on

Ø  Baking industry

l  The following benefits can be seen when the Neutral Protease has been used: Dough handling property modification, biscuit color improvement, reduced use of pyrosulfite and additives.

Ø  Brewing industry

l  For brewing the product helps increase FAN level in wort especially when specific adjunct like barley is used, and prevent cold haze of beer.

Ø  Textile industry

l  Compared with traditional processing technique, treatment with Neutral Protease makes wool have more tensile strength, softness and less shrinkage. The product has also been used for the silk degumming and refining with satisfactory results.

Ø  Leather industry

l  In tanning industry, the protease has been used for depilation of hide with efficient hair removal, nice grain, less pore shrinking and no other harms.

Ø  Feed industry

l  Either added during processing into feed or mixed with feed before feeding, Neutral Protease improves biological value of protein from different sources, and therefore, helps to make best use of feed and reduce processing cost.

Ø  Soybean protein modification

l  By careful control of degree of hydrolysis Neutral Protease is able to improve the functionality of soy protein isolate or soy protein concentrate, for example, dispersibility, foaming properties, and render health functions by producing functional peptides.

APPLICATION RECOMMENDATION

The recommended dosage is 0.01-5kg/t DS. The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.

Enzyme preparations are proteins that may induce sensitization and cause allergic type of symptoms in susceptible individuals. Prolonged contact may cause minor irritation for skin, eyes or nasal mucosa. Any direct contact with human body should be avoided. WARNINGS

Keep sealed after use every time to avoid microbial infections and inactivation of enzymes until its finish.

Ø  Storage Keep sealed in a dry and cool place and avoid direct sunlight. Slight sedimentation is acceptable since it will not impact performance of the product.
