Food grade cellobiase or beta-glucosidase

PRODUCT DESCRIPTION
The product is produced by submerged fermentation of a selected fungal strain followed by purification and formulation. Cellobiase is also named β-glucosidase. It is a hydrolytic enzyme with the family name of β-D-glucoside hydrolase or gentiobiase. It also exhibits transglycosidase activity.

MECHANISM
Cellobiase (Beta-Glucosidase) is part of cellulose degrading enzyme system, acting on cellobiose or cello-oligosaccharide, and together with exoglycanases and endoglucanases completely hydrolyzes cellulose into glucose. In addition, the enzyme is capable of breaking down β-glycosidic links on glycosides, removing glucose from its aglycone. Many precursors of functional components in plant extract or food are glycosides. Cellobiase can work on these precursors to liberate the wanted functional components.

APPLICATIONS
1. Gentiooligsaccharide production: Uses its glucosyltransferase activity to produce gentioolgosaccharide from glucose.
2. Cellulase booster: Supplements cellulase with the product will effectively boost the performance of cellulase by as much as 20%..
3. Aroma release: Helps release aroma (aglycone) in tea, fruit, vegetable and others by removing sugar group from aroma precursors (glycoside).
4. Debittering: Decomposes laetrile into benzaldehyde, hydrocyanic acid and two molecules of glucose to greatly reduce the bitterness.
5. Plant extract: Improves the polydatin yield.

PRODUCT SPECIFICATION
Light brown liquid. Color may vary from batch to batch. Color intensity is not an indication of enzyme activity.

APPLICATION RECOMMENDATION
The recommended dosage is 0.1-5kg/t DS. The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.

SAFE HANDLING PRECAUTIONS
Enzyme preparations are proteins that may induce sensitization and cause allergic type of symptoms in susceptible individuals. Prolonged contact may cause minor irritation for skin, eyes or nasal mucosa. Any direct contact with human body should be avoided. If irritation or allergic response for skin or eyes develops, please consult a doctor.

WARNINGS
Keep sealed after use every time to avoid microbial infections and inactivation of enzymes until its finish.
