Glucose Isomerase for high fructose syrup

 DESCRIPTION

Glucose isomerase (GI, EC 5.3.1.5; also known as D-xylose ketol isomerase, xylose isomerase (XI), xylose ketoisomerase, and xylose ketol-isomerase), is one of the three most commonly produced industrial enzymes, along with amylase and protease. This enzyme is extensively used in the industrial production of high-fructose corn syrup (HFCS), and it can also be used to boost cellulosic ethanol yield and used in the production of low glycemic index foods.

 MECHANISM

The catalytic reaction of GI occurs in three major steps: (i) ring opening, (ii) isomerization, and (iii) ring closure as illustrated by the following.

 

GI requires divalent cations as cofactors for its isomerization activity. Typically, GI is known to exhibit the highest activity in the presence of divalent metal ions such as Mg2+, Mn2+ and Co2+; however, the specific metal ion requirement can vary depending on the source of the enzyme.

APPLICATIONS

l  High-Fructose Corn Syrup (HFCS).

l  Boost ethanol production by isomerization of xylose to xylulose that can be fermented to ethanol by yeast.

l  Produce low glycemic index by converting glucose into fructose.

 APPLICATION RECOMMENDATION

The highest activity required in the reaction system is Mg2+ and Co2+. Their optimum concentrations are 10-2mol/L and 10-3mol/L, respectively.

 The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.

 SAFE HANDLING PRECAUTIONS

Enzyme preparations are proteins that may induce sensitization and cause allergic type of symptoms in susceptible individuals. Prolonged contact may cause minor irritation for skin, eyes or nasal mucosa. Any direct contact with human body should be avoided. If irritation or allergic response for skin or eyes develops, please consult a doctor.

 WARNINGS

Keep sealed after use every time to avoid microbial infections and inactivation of enzymes until its finish.
